4 bell peppers, 1/2 medium onion, 2 1/2 tbsp. vinegar, 1 tbsp. oil, 1/8 tsp of salt & pepper
Remove tops & seeds of bell peppers, cut into 1/4 inch strips, peel onions & slice into thin strips. In a large mixing bowl, stir vinegar, oil, salt & pepper. Add the bell pepper & stir to coat. Cover & refrigerate before serving.
