Grilled Eggplant


1 Firm Eggplant (peeled and sliced)
4 tsbp olive oil
basil, salt, and pepper to taste

Place olive oil and spices in a shallow, large bowl. Place each piece of eggplant in and turn to coat both sides. Place slices on a grill, turning only once for 5-6 minutes. Serve with any sauce you like or eat plain.
