INGREDIENTS:
5 Cups Rice Chex Mix
1 Cup Pretzel Sticks, (broken in half)
1 and 1/4 Cups Lucky Charms Marshmallows
1/4 Cup Green Sprinkles
11 oz White Chocolate Chips
STEPS:
1. In a large bowl, mix rice chex cereal and pretzel sticks.
2. In a heat safe bowl, add white chocolate chips, and melt in the microwave in 15 second intervals. Stir and repeat until the chips have melted.
3. Pour chocolate over chex and pretzels, and stir gently until coated.
4. Add marshmallows, and toss to combine.
5. Spread mixture over a parchment lined baking sheet, and top with sprinkles.
6. Let cool and harden for about an hour.
7. Break apart, and enjoy!

INGREDIENTS:
1 Cup Refried Beans
1 Tbsp Taco Seasoning
15 Frozen Mini Fillo/Phyllo Shells
1 Green Onion, thinly sliced
1 Tomato, Diced Small
1 Jalapeño, Diced Small
1/2 Cup Shredded Cheese
STEPS:
1. Preheat the oven to 350 degrees.
2. Mix refried beans and taco seasoning in a medium bowl.
3. Place mini fillo shells on a parchment-lined baking sheet, and fill each with refried beans mixture. Then top each with shredded cheese.
4. Bake in the preheated oven for 7 minutes.
5. Top each with jalapeño, tomato and green onion.
6. Enjoy!

4 Jalapeños
3 oz Bacon, diced and cooked
3 oz Cream Cheese, softened
1/4 Cup Shredded Cheddar Cheese
1 Tsp Green Onions, thinly sliced
1 Clove Garlic, minced
STEPS:
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Cut jalapeños in half, and remove seeds and ribs with a spoon. Arrange inside up on baking sheet.
3. In a large bowl add bacon, cream cheese, cheddar cheese, green onions and garlic. Mash with a fork until fully combined.
4. Fill jalapeño halves with the cheese mixture.
5. Bake for 20 mins, or until cheese is melty and the jalapeños are soft.

1 Ib Green Beans
4 Tbsp Olive Oil
1 Tsp Garlic Salt
1/4 Tsp Pepper
10 Cloves Garlic, Sliced
1/4 Cup Grated Parmesan
STEPS:
1. Preheat the oven to 400°F.
2. In a large bowl, mix green beans with 3 tbsp olive oil, garlic salt and pepper.
3. Arrange green beans in a single layer on a baking sheet, and roast for 10 mins.
4. Mix remaining 1 tbsp olive oil with sliced garlic in a small bowl.
5. Take the baking sheet out of the oven, and add sliced garlic and parmesan to green beans. Toss, and arrange in a single layer.
6. Roast for 8-10 more mins.
7. Enjoy!

]]>Collard Greens Salad
Prep: 15 mins, Total: 15 mins
INGREDIENTS:
8-10 Collard Green Leaves, chopped with stems removed
1 Yellow Bell Pepper, diced
1/2 Cup Red Onion, diced
1/4 Cup Green Onion, sliced
1/2 Cup Grape Tomatoes, halved
1/4 Cup Feta Cheese Crumbles
For Dressing:
1/2 Cup Rice Vinegar
2 Tbsp White Wine Vinegar
3 Tbsp Olive Oil
1 Tsp Garlic Salt
1 Tbsp Sugar
1/4 Tsp Pepper
1/2 Tbsp Herbs de Provence
STEPS:
1. De-stem the collard green leaves. Roll remaining leaf, and chop.
2. For the dressing, add rice vinegar, white wine vinegar, olive oil, garlic salt, sugar, pepper, and herbs de provence to a medium bowl. Mix well.
3. In a large bowl, add collard greens, yellow bell pepper, red onion, green onion, grape tomatoes, and feta cheese. Top with dressing. Toss to combine. The vinegar dressing softens the collard greens, so make sure to coat well!
4. Refrigerate salad for a minimum of an hour before serving.
5. Enjoy!
Quick and Easy Bruschetta
Prep: 15 Mins
INGREDIENTS:
5 Tomatoes, diced
1/3 Cup Basil, cut into thin ribbons
4 Cloves Garlic, minced
2 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
1 Tsp Garlic Salt
1/4 Tsp Pepper
1 Baguette, sliced
Balsamic Glaze, (optional)
Shredded Parmesan, (optional)
STEPS:
1. Preheat the oven to 400°F.
2. Slice baguette, and add slices to baking sheet. Brush each slice with olive oil, and bake for 8 mins.
3. Combine tomatoes, basil, garlic, olive oil, balsamic vinegar, garlic salt and pepper in a large bowl. Mix well.
4. Top each bread slice with bruschetta mixture, a drizzle of balsamic glaze (optional), and a sprinkling of shredded parmesan cheese (optional).
5. Enjoy!
Honeydew and blueberry parfaits
Prep: 10 Mins, Makes 4 Parfait Cups
INGREDIENTS:
1.5 Cups Nonfat Vanilla Yogurt
1 Cup Blueberries
1/2 Honeydew, melon balled
1 Cup Granola
Honey, to taste
STEPS:
1. Melon ball half of a honeydew.
2. Add a heaping 1/3 cup yogurt to the bottom of each glass.
3. Top with an even layer of Granola.
4. Line glass with blueberries, making a ring.
5. Add honeydew melon balls.
6. Drizzle honey to taste.

INGREDIENTS:
2 15oz Cans of Corn $1.28
2 Tbsp Butter 25¢
1 Jalapeno, Minced 46¢
3 Tbsp Mayonnaise 14¢
3 Tbsp Cilantro, Chopped 88¢
1 Lime, Juiced 38¢
2 Cloves Garlic, Minced 67¢
1/4 Tsp Chili Powder 10¢
1/4 Tsp Paprika 10¢

STEPS:
1. Melt butter in a large skillet over medium heat.
2. Add corn, jalapeno, and garlic, and cook for 10 mins, stirring occasionally.
3. Turn heat to low, and add lime juice, cilantro, mayo, chili powder, paprika, cumin, and cotija. Mix well.
4. Remove from heat, and garnish with crushed Flamin Hot Cheetos, extra cotija, and more cilantro.

INGREDIENTS
1/4 Cup Brown Sugar
3 Tbsp Unsalted Butter, Melted
1 Apple, Sliced
1 Pillsbury Crescent Roll Tube
1/2 Cup Chopped Pecans, (optional)
SPICE MIX
2 Tsp Cinnamon
1 Tsp Nutmeg
1 Tsp Ginger
1/2 Tsp Clove
STEPS:
1. Preheat the oven to 375° F, and line a baking sheet with parchment paper.
2. Combine cinnamon, nutmeg, ginger and clove in a small bowl. Mix well.
3. Mix spice mix with brown sugar.
4. Add melted butter to apple slices, and toss to combine.
5. Roll out crescent dough, and cut triangles with a pizza cutter.
6. In the center of each dough triangle, add brown sugar mix, an apple slice, and pecans. Roll from the wide end of the triangle, wrapping each apple with dough, and add to the baking sheet.
7. Brush each roll with melted butter, and sprinkle lightly with brown sugar mix.
8. Bake for 10-12 minutes, or until golden brown.
9. Let cool, and enjoy!

1 Cup Strawberries, rinsed and dried
8 oz White Chocolate Chips
4 oz Milk or Dark Chocolate Chips
STEPS:
1. Melt white chocolate chips in the microwave at 30 sec intervals, stirring after each interval, until fully smooth.
2. Dip each strawberry in the melted chocolate, and place on a parchment paper lined tray. Drag and drop each dipped strawberry along the parchment paper to create a ‘ghost tail.’
3. Let strawberries cool on the counter or in the fridge.
4. Melt milk/dark chocolate chips in the microwave at 30 sec intervals until smooth.
5. Add melted chocolate to a bag, and cut the end.
6. Squeezing the bag gently, add ghost eyes and a mouth to each strawberry.
7. Let cool, and enjoy!

1 tablespoon olive oil (or other vegetable oil)
1 small onion, chopped
2 cups summer squash (washed and sliced)
1 cup carrots, thinly sliced
seasonings, to taste
STEPS
1. In a skillet (the larger the better), heat oil on medium-high
heat.
2. Add onion and stir fry until onion is clear and begins to
brown.
3. Add carrots and stir until carrots are tender and crisp. Add
squash and cook for about 2 minutes. Lower heat.
4. Add seasonings of choice. Cook for 2 more minutes. Serve
as a side dish.

3 bananas (large, well-ripened)
1 egg
2 tablespoons vegetable oil
1/3 cup milk, fat-free
1/3 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cups flour
STEPS
1. Preheat the oven to 350 °F.
2. Mash the bananas In a mixing bowl then add the egg, oil, milk, sugar,
salt, baking soda, and baking powder. Mix well with a fork.
3. Slowly stir the flour into the banana mixture. Stir for 20 seconds until
the flour is moistened.
4. Lightly grease the bread pan with a little oil or cooking spray. Or, line
the pan with wax paper then pour batter into the pan.
5. Bake for 45 minutes until a toothpick inserted near the middle comes out
